Easy-Breezey Taco Salad
I diced the onion and added to my 12" non-stick skillet with the ground turkey. I browned the ground turkey and onions for about 8-9 minutes then added the taco seasoning in the form of the Fronted Grill skillet sauce. In the future I would use a different taco seasoning. The Frontera Grill skillet sauce has 2grams of sugar which is something we are supposed to avoid. I found a few with 0grams of sugar online. Sigh, next time...
Next, I simmered the skillet sauce with the ground turkey mixture on low while I prepped our salad.
I diced the tomato (I used about half) and half of the avocado. To assemble the salad I put a few generous handfuls of butter lettuce inner salad bowls, topped with the ground turkey mixture, then sprinkled a few tomatoes and 1/4 of the avocado over the top. I then put a tablespoon of some fat-free salsa on top and DUG IN!
Pros: We were pretty happy with our version of a taco salad. Also, there were very few dishes that needed to be cleaned once we were done and that's always a "pro" in a house without a dishwasher!
Cons: We both agreed we would try a different taco seasoning next time. This one felt like it needed to be wrapped up in a taco shell rather than topping lettuce. Good, but not great.
